Mango processing

Bertuzzi designs and manufactures mango pulp processing machinery for the production of high quality mango juice and puree, either single strength or concentrated. We can supply complete mango processing plants as well as single machines to meet specific requirements.

Washing and sorting

Our universal washing basing InoxAll is suitable for cleaning any fruit destined to the industrial transformation. The unit takes the fruits through two subsequent washing processes: by immersion in a basin and by shower on an elevator.
After being washed, mangoes are fed to our universal sorting station Selinox where they can be efficiently inspected by the personnel.
Finally, we advise to complete the cleaning with a brushing machine: the rotating brushes allow to remove any extraneous matters and any dirt that has adhered to the fruits.

Stoning and pulp refining

Bertuzzi mango destoners (Super Mango Destoner and Jumbo Mango Destoner) have been especially designed to automatically destone and peel fresh mangoes: by precisely separating stones and peels from pulp, they allow to maximize both the yield and the quality of the final product.
The unrefined mango pulp is sent to our single stage pulper SuperCreamer, which refines the puree to the required level, while ensuring low degree of air absorption and therefore low oxidation.
For enzymatic deactivation the mango pulp can be sent to a tubular preheater, that can be also used to pre-heat the unrefined pulp before it is refined by SuperCreamer, in order reach a higher production yield.
A centrifugal decanter can be adopted to eliminate black specks and for a further delicate depulping.

The electrical panel of the plant and behind it, at the first floor of the structure, a mango stoner, that feeds by gravity the SuperCreamer placed below. This plant has a capacity of 5000 kg/h

Deaeration or concentration

The possible final products of our mango processing lines are natural puree or concentrated puree.
In the first case, the natural puree is fed to a deaerator, in order to remove the air incorporated in the product and consequently extend shelflife. The dearation is performed by nebulization under vacuum, in order to avoid oxidation. The aromatic vapors can be condensed and newly incorporated directly into the product by means of an aroma recovery device supplied with the dearator.
In the case of concentrated puree, the refined puree is pumped to a thin-film continuous evaporator. The versatility of our swept evaporators is really unrivalled: they can easily process low-pulp or high-pulp juices, delicate or thermo-resistant juices, as well as low or high viscosity juices. The residence time is among the shortest possible and the concentration is achieved in one sole passage.

Sterilization and filling

The mango puree, concentrated or natural single strenght, can be sterilizied or pasteurized depending by the specific request of the application, by a tube-in-tube sterilizer/pasteurizer.

Once sterilized the product can be filled in aseptic bag in drums or in box thanks to Bertuzzi Aseptic Fillers.

Cleaning of the plant

All Bertuzzi lines are designed according to the international food grade requirements and to be fully cleanable by exploiting integrated cleaning procedures and systems or centralized and fully automatic CIP system. The Bertuzzi CipMatic is specifically designed to guarantee a perfect and efficent CIP of the fruit processing plants.
